On love’s month, “Recipes with History” visited the famous Arcádia. Went to know the craft processes that make the best Portuguese chocolate, that is the main ingredient of this passionate recipe.
70% Chocolat Coulant with Chef’s Ice Cream
Coat 10 molds with fat spray and cocoa powder.
Add the egg yolks to the melted chocolate.
Wisk the whole eggs and the sugar until get a fluffy cream.
Melt the chocolate and the butter in a hot water bath.
Add to the chocolate the sugar and eggs mix.
Put the mix in the molds and bake at 180ºC for 10 minutes.
Serve the Coulant with crumble, red fruits, puff pastry and the sorbet.
Decorate with the micro cress and surprise your better half!
